As temperatures rise and daylight lingers, those of us lucky enough to live on the Front Range get to spend more time enjoying the great outdoors. When I was a kid, the only reason I ate dinner was to get to dessert. Just knowing there was a big scoop of vanilla ice cream or banana pudding or cookies waiting for me, made everything (except broccoli) worthwhile. As an adult, desserts are even more of a treat because I can’t scarf them down like I used to, thanks to a slower metabolism and the desire to continue to fit into my favorite jeans. That’s why I LOVE throwing a dinner party, because I always include dessert.

The chic restaurants and cookbooks are all about Italy’s delicate prosciutto, Spain’s pata negra, French duck confit. Respect runs deep for the wonders of American bacon, and other homegrown delicacies like Louisiana’s andouille and boudin sausages. But the simplest, most basic of cured meats doesn’t ever seem to get any respect from the high priests of the cooking world.
