Florian Wehrli picks a bottle from the storage room of Chimney Park Bistro. For Chimney’s Park’s third anniversary, Wehrli has chosen beer tasting as a new event for his customers.

Chimney Park Bistro’s chef and co-owner Florian Wehrli wants to celebrate three successful years of business in Windsor with something unusual.
While the “small-town restaurant with big city sophistication” often hosts wine-tasting dinners, and has won the Wine Spectator Distinguished Award of Excellence in both 2005 and 2006, Wehrli has opted for a beer-tasting event, which takes place Jan. 23, to mark three years in business.
“We are constantly creating special events that our customers will enjoy, and we thought it would be interesting to combine our signature dishes with 10 exceptional beers from Avery Brewery in Boulder,” Wehrli said. “We love to use ingredients and products from small, quality, area producers at our restaurant. Avery Brewery is one of them. Their beers are in a class all their own. They make finely crafted big beers, using superior ingredients.”
Classically trained in culinary arts in Switzerland and France, Wehrli credits much of the success of Chimney Park Bistro to the quality of produce and ingredients that is available locally.
Area suppliers include Spomer Ranch (bison), Long Family Farm (pork), Hi-Ho Sheep Farm (lamb) and several cheese makers.
“Many of our producers will be on hand at our third anniversary celebration,” Wehrli said. “We also promote our producers on our menu, and this will give our customers a chance to meet the best suppliers in the business.”
Wehrli and his cooking brigade will prepare some of the restaurant’s signature items for the event, including Hi-Ho Farms Lamb Roast and the must-not-miss Spomer Ranch Bison Carpaccio. It features extremely thin slices of marinated bison, with mustard sauce, Grana Parmesan shavings, Olio Verde (imported green olive oil), served with Gaufrettes Potatoes (tiny homemade potato chips.)

The Spomer Bison Ranch, 236785 Weld County Road 27 1/2 in Milliken, is where Chimney Park gets its supply of bison meat. Bison is much lower in fat that beef, and the ranch doesn’t use growth hormones or stimulants. The ranch sells bison rib eye, briskets, roasts, fajita meat, ground meat, jerky, summer sausage and more. If you haven’t been there, it’s worth the trip just to see the bison herd. Can’t make the tasting at Chimney Park Bistro? Hit a beer tasting at the brewery, instead. Avery Brewery’s Tasting Room is open from 2-6 p.m. Wednesday-Friday, with tours at 5 p.m.
It has, “Tables to crowd around, a bar to lean against and a killer beer line-up.” It just might be worth the drive to Boulder if you’ve hit all the microbreweries in Fort Collins already.

I am a recent college graduate of Minnesota State University Moorhead. After recieving my B.A. in English and Mass Communications this past August I moved down to Colorado.
I enjoy long walks on the beach, candlelight dinners, and heavy metal. My hobbies include reading and writing, music, movies, and getting drunk.
