Page 3 of 6 MEET THE MENU The Chef2Chef dinner to benefit chef2chef.net is Aug. 15 at Chimney Park Bistro, 406 Main St., Windsor. The event brings in chefs from in and out of the country, who will all use Colorado ingredients to prepare a meal. Here’s what will make it to the table:
Course 1: Mumm Napa Brut Sparkling Toast, from National Wine Distributing
Course 2: Prepared by Jean Denham • Food: Dungeness crabcake, fries with huckleberry “ketchup” and spicy coleslaw • Wine: 2005 Taburno Greco di Tufo, from Synergy Fine Wines
Course 3: Prepared by Dave Nelson and June Jacob, with chef2chef grant recipient Crystal Frazier, French Culinary Institute • Food: Grilled quail breast stuffed with pan roasted garlic and basil wrapped in Prosciutto, wrapped in grape leaves. With Humbolt Fog Bread Pudding and Savory Jus • Wine: Albert Mann Pinot Blanc ‘04, from Wine Source
Course 4: Prepared by Bob Ballantyne, with Chef Moselle McKena of Boulder • Food: Trout of Four Seasons: An Anasazi Interpretation • Wine: Soave Classico “Pressoni” 2004, from Bacco Wine Import
Course 5: Prepared by Michael Elsner • Food: HoneyAcre Vine Ripe Tomato Salad, with New Belgium Skinny Dip vinaigrette and Morning Fresh Red Orchard cheese shavings • Wine: Babcock Pinot Noir Tri-County Pinot Noir, from Elite Brands
Course 6: Prepared by Florian Wehrli and Chef de Cuisine Evey Post of Chimney Park Bistro • Food: Braised Spomer Ranch Bison crepinette, with foie gras sauce, Oberle Botanical candied beets and crispy sage • Wine: Lorca Petite Syrah, California, 2003, from American Wine & Spirit
Course 7: Prepared by Michael Polcyn, with Alison Williams of Johnson and Wales in Denver • Food: Roasted Hi-Ho Sheep Farm leg of lamb, with rhubarb syrup, sweet potato “Hash,” grilled haricot verts and carrot allumettes • Wine: Baileyna, Grand Five Peak Cuvee, Syrah, Edna Valley, 2003
Course 8: Prepared by Jennifer Gordon • Food: Palisade peach parfait and raspberry sorbet • Wine: Dessert wine

|  | What is up FoCo?
I am a recent college graduate of Minnesota State University Moorhead. After recieving my B.A. in English and Mass Communications this past August I moved down to Colorado.
I enjoy long walks on the beach, candlelight dinners, and heavy metal. My hobbies include reading and writing, music, movies, and getting drunk. Some of my favorite contemporary authors include Bret Easton Ellis, Chuck Palahniuk, and Kurt Vonnegut. My top movies are anything directed by Kubrick. I enjoy listening to anything that rocks.
Right now I am just trying to get to know Colorado and FoCo better. Mostly in order to find the best drink specials on each day that ends in Y. So if you know where I can get a cheap drunk on, let me know!
