Camping season is officially upon us, and I know many of you will head to the mountains for a little outdoor R&R. Some of you are experts, others are just venturing into the great outdoors, so here’s a little advice for cooking over a campfire.
There’s no easier way to cook over a fire than to use a long skewer to roast your food. Ideal for marshmallows, hot dogs and brats.
Another easy method is to place a grill over your campfire. Make sure it’s high enough above the flames, or better still, wait until you’ve got hot coals to cook over.
Great for burgers, sausages, bacon.
For many campers, a Dutch oven is the most important thing to pack. In fact, a Dutch oven was Lewis and Clark’s most valued possession as they explored the wilds of North America. These cast iron or aluminum pots have small feet that rest in the coals. Great for stews, chili — even baking. When used correctly, it can work just like your oven at home. Too heavy for backpacking!
Portable camping stoves are also a great option, and can be lightweight enough for backpackers. They are small, and powered by propane, kerosene, naphtha or even wood.
Aluminum foil is one of the easiest campfire cooking methods around.
You don’t need a pot, pan, grill or oven. Just wrap your food in several layers of heavy duty foil, place it in the coals and before you know it, dinner’s ready!
REI Manager, Brian Clark offered some campfire cooking advice.
“When they let me out of work, I’m a big camper,” he said. “But I’m a simplist. I love the freeze-dried stuff you can buy at REI. It’s easy, you don’t have to bring all kinds of ingredients and you don’t have to worry about food storage.”
REI carries more than 150 different freeze-dried meals, from Backpacker’s Pantry Beef Stroganoff and Mountain House Grilled Chicken Breasts and Mashed Potatoes for two, to AlpineAire Teriyaki Turkey and Mountain House Blueberry Cheesecake. For most entrees, all you do is add boiled water and serve. And it’s packaged in a way that you don’t have to worry about attracting animals.
But if you want to prepare your own food, and the last thing you roasted over a campfire is a marshmallow, it’s time to expand your horizons. Jon Edwards, manager at Dick’s Sporting Goods in Loveland spends a lot of time camping and fishing. He was kind enough to share a few of his favorite recipes.

I am a recent college graduate of Minnesota State University Moorhead. After recieving my B.A. in English and Mass Communications this past August I moved down to Colorado.
I enjoy long walks on the beach, candlelight dinners, and heavy metal. My hobbies include reading and writing, music, movies, and getting drunk. Some of my favorite contemporary authors include Bret Easton Ellis, Chuck Palahniuk, and Kurt Vonnegut. My top movies are anything directed by Kubrick. I enjoy listening to anything that rocks.
